Chicken Taco Soup

Do you love tacos? How about the convenience of slow cooker meals? Try this slow cooker chicken taco soup recipe!

Slow Cooker Chicken Taco Soup

1 onion, chopped

1 (16 ounce) can chili beans

1 (15 ounce) can black beans

1 (15 ounce) can whole kernel corn, drained

1 (8 ounce) can tomato sauce

1 (12 ounce) can or bottle of beer

2 (10 ounce) cans diced tomatoes with green chilies, undrained

1 package taco seasoning

3 whole skinless, boneless chicken breasts

1 (8 ounce) package shredded Cheddar cheese

Sour cream

Crushed tortilla chips


Put the onion, chili beans, black beans, corn, tomato sauce, beer and diced tomatoes in a slow cooker. Add taco seasoning and stir to blend. Lay the chicken breasts on top of the mix and press down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover and cook for 5 hours. Remove the chicken breasts from the soup, shred and stir back into the soup. Continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream and crushed tortilla chips. Makes 8 servings.

Winter Car Kit

Everyone should carry a Winter Survival Kit in their car. In an emergency, it could save your life and the lives of your passengers. Here is what you need:

  • A shovel
  • A windshield scraper and small broom
  • Flashlight with extra batteries
  • Battery powered radio
  • Water
  • Snack food including energy bars, dried fruit, raisins and candy bars
  • Matches and small candles
  • Extra hats, socks and mittens
  • First aid kit with a pocket knife
  • Necessary medications
  • Blankets or sleeping bag
  • Tow chain or rope
  • Road salt, sand, or cat litter for traction
  • Booster cables
  • Emergency flares and reflectors
  • Fluorescent distress flag and whistle to attract attention
  • Cell phone adapter to plug into lighter

Whole Wheat Beer Bread

So, it’s the New Year, and you’ve made a resolution to eat healthier. Sounds boring, right? Well, it doesn’t have to be. Healthy recipes can be full of flavor! Here is an example:

Whole Wheat Beer Bread

1 ½ cups all purpose flour
1 ½ cups whole wheat flour
4 ½ teaspoons baking powder
1 ½ teaspoons salt
1/3 cup packed brown sugar
1 (12 ounce) can or bottle beer

Preheat the oven to 350 degrees F. Lightly grease a 9x5 inch loaf pan. In a large mixing bowl, combine the all purpose flour, whole wheat flour, baking powder, salt and brown sugar. Pour in the beer and stir until a stiff batter is formed. It may be necessary to mix dough with your hands. Scrape the dough into the loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Makes 12 servings. Note: The type of beer used will affect the flavor of the bread. For a lighter bread, use a pale ale. For a darker, heartier bread, use a stout or dark ale.

Failure for the win!


Did you know there is a Museum of Failure? It is in Helsingborg, Sweden and contains failed products and services. The museum has over seventy failed items including Apple Newton, Bic for Her, Google Glass, Lobotomy instruments, Harley-Davidson Cologne, Sony Betamax, Lego Fiber Optics, a plastic trachea and plastic bicycle, the Edsel and DeLorean cars, New Coke and Coke Blak, Colgate lasagna, and the Trump board game. The museum provides an experience about the important role of failure for innovation. I would love to see this!  - Riley
